On one of the campaign video clips I saw a NATO soldier doing press-ups. How do you do that?

It's one of the switchmove/playmove animations I think.   Full list in the Ed Depot - tutorials - references.

IMHO it isn't, but nobody gets too bogged down over whether a question should be on this board or the general board so don't worry about it.

this is quite simple

in da units init field:

this switchmove "FXStandDip"

or a trigger on activation:

unitname switchmove "FxStandDip"

If you depbo the original missions (1985.pbo i think) you can open up that mission and find the script that does the pressups. Then you dont have to worry about getting the timing right.
