Before placing an empty vehicle you must put a player start. After that you'll see the choices under "Empty" when placing units.

In case you haven't found it already we have a section called the Editors Depot (link at the top of this page) which has nearly 200 tutorials to help you get going.    Start in the "Getting Stared" section, there's lots of good stuff there.    ;)
