Afaik, that video was shot using the Y2K3 mod, which automatically had that script whenever an infantry guy was hit by a anthing larger that a .50cal. I don't have the mod installed on my computer anymore, otherwise i'd take a look around for it.
But thats not so much body parts removing as just the whole body being removed.
