how do i edit p3d models with the ODOL format

No can do.
You're stumped my mate. There's no tool available to us that lets you edit the ODOL models. Sorry.

You don't..
Unless you have some tool from BIS that would allow you to do that.. or that mysterious piece of software called "P3DEdit"..
