You have to use the get bank/pitch function at the editor depot to get he actual pitch angle of the object.  However, if you need to get the angle of climb or dive of a moving object, you can use the Velocity command and then use trig, or you can use my handy VelAng function which will return the angle at which a moving object is climbing or diving.  The VelAng function can be found with the Super Chopper script and demo, or with the Super Guided Missile script and demo at the editor depot.

Well, this still does not able you to set the pitch of an object... ::)

Of course, by using multiple models of the same object all in different angles and creating the object which has the closest angle matching the pitch...

Or am I completely and utterly ranting about something completely different...? ;D :P (sooo sleepy...)
If so, I'm sorry and will get me coat... ::)
