1) Easiest way: make an empty jeep instead, give it a name in the editor.... make a LAW soldier... type this in his init field:
this moveindriver
jeepname where jeepname is whatever you designated the jeep as in the editor..
The commands; moveingunner and moveincommander can be used the same way for all vehicles..... with a pilot being considered a 'driver'
2) Choppers can be tricky that's for sure...
but try simply using an unload cargo waypoint for starters..
followed by another after it... if you're the commander, then you'll still have to tell your guys to disembark, but if it's all AI, they should hop out themselves....
You can also take a look through the ed depot for any useful scripts anyone has written for quick landings.. seems to me there are one or two I can think of that have been done at least..
